Ingredients
- - 3 cups old-fashioned rolled oats
- - 1 cup raw cashews, roughly chopped
- - 1/2 cup pepitas
- - 1/3 cup sesame seeds
- - 1/3 cup dried cranberries
- - 1/3 cup maple syrup
- - 1/4 cup melted coconut oil
- - 1 teaspoon ground cinnamon
- - 1/2 teaspoon ground cardamom
- - 1/2 teaspoon fine sea salt
- - 1 teaspoon vanilla extract
- Serving idea: Spoon over Greek yogurt with fresh berries, or enjoy with milk and sliced banana.

Directions
- Heat the oven to 350 F. Line a large baking sheet with parchment paper.
- In a large bowl, combine the oats, cashews, pepitas, sesame seeds, cinnamon, cardamom, and salt.
- In a small bowl, whisk together the maple syrup, coconut oil, and vanilla.
- Pour the wet mixture over the oat mixture and stir until everything is evenly coated.
- Spread the granola in an even layer on the prepared baking sheet.
- Bake for 30-40 minutes, stirring every 15 minutes to ensure nothing burns. It is ready when golden and fragrant.
- Let cool completely on the tray. Break into clusters, then fold in the dried cranberries.
- Store in an airtight container for up to three weeks.
