Ingredients
- 2 cupsold-fashioned rolled oats
- 2 mediumapples, coarsely grated
- 3 cupsunsweetened milk of choice
- ¼ cupmixed pumpkin and sunflower seeds
- 1½ teaspoonsground cinnamon
- 2 teaspoonsground cardamom
- 1 teaspoonvanilla extract
- ¼ teaspoonsalt
- ½ cupapple, cut into thin matchsticks
- ½ cupplain yogurt
- ¼ cupchopped toasted walnuts, Maple syrup, optional

Directions
- Heat the oven to 350°F
- Lightly grease a 10×8-inch baking dish.
- Mix the oats, grated apples, seeds, cinnamon, cardamom, and salt in the dish.
- Stir in the milk and vanilla.
- Bake for 30-35 minutes , until the edges are bubbling and the top is lightly golden.
- The center should remain moist.
- Rest for 5 minutes, then stir gently.
- Divide into four bowls and top with fresh apple, yogurt, walnuts, and optional maple syrup.
